Goji Berry and Strawberry Smoothie

Ingredients

  • 1 cup non-dairy milk

    • I personally enjoy So Delicious Organic Coconut Milk, Unsweetened

  • 1 cup strawberries fresh or frozen, stems removed

  • 1 ripe banana fresh or frozen, chopped into rounds

  • 1 tablespoon dried goji berries, soaked in water until plump

    • Or 2-3 Tbs fresh or frozen goji berries

    • Fresh goji berries available from Riverland Family Farms at the Beaverton, Lake Oswego, and Corvallis Farmer’s Markets

  • 1 tablespoon almond butter

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon ground ginger

    • Or chopped fresh ginger to taste, my preferred version!

  • Pinch sea salt

Instructions:

     Add all ingredients to a blender, blend together until smooth, and enjoy!

Tips:

·       I enjoy buying a half flat of goji berries from Riverland Family Farms every summer so that I can enjoy this recipe all year long!

·       I find the consistency of the smoothie is better when at least one half of your fruit is frozen. Typically, I will use frozen bananas, fresh strawberries, and fresh or frozen Goji berries.
